Tasty Tuesday: Roo’s Famous Chili

This weekend after my first 7 mile training run I had this baby in the crockpot when I finished. It is delicious, healthy and super easy to make.  I also had enough to pack up and bring to work for lunch throughout the week!

Ingredients:

  • 2 lb ground lean beef
  • 1 green pepper
  • 1 red pepper
  • Half a red onion
  • 2 small sweet potatoes
  • 1 can of corn
  • 1 can of kidney beans
  • Half a package of bacon (about 8 pieces)
  • 3 cans crushed tomatoes
  • 1 tablespoon garlic powder
  • 1 tablespoon chili powder
  • 2 tablespoons smoked paprika
  • 2 teaspoons cumin
  • salt (to taste)

Directions: Set oven to 350 degrees and line a pan with parchment paper. While oven is heating dice all of the vegetables and set aside. Cook bacon in oven for about 10 minutes or until crispy. Set aside bacon to cool. While bacon is cooling add the three cans of crushed tomatoes into your slow cooker.  Then add beef, corn, kidney beans and diced veggies. Once cooled dice bacon and add to the slow cooker.  Mix all of the ingredients with a large spoon while adding in the spices.

Cover the slow cooker and let cook for 6-8 hours; then ENJOY!
